Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux. Cook, stirring constantly, until the roux turns a deep golden brown colour, about 15-20 minutes.
  2. Add the diced onion, bell pepper, and celery to the pot, and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes.
  4. Add the chicken pieces and andouille sausage to the pot, and cook until the chicken is browned on all sides.
  5. Pour in the chicken broth and diced tomatoes, and bring the mixture to a boil.
  6. Reduce the heat to low, and add the sliced okra, bay leaves, thyme, oregano, paprika, cayenne pepper, salt, and pepper. Simmer the gumbo, uncovered, for about 45 minutes, stirring occasionally.
  7. Taste and adjust the seasoning if needed.
  8. Serve the chicken gumbo over cooked white rice, garnished with chopped green onions.
