- 12 oz andouille sausage, sliced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup okra, sliced (fresh or frozen)
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Cooked white rice for serving
- Chopped green onions for garnish
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux. Cook, stirring constantly, until the roux turns a deep golden brown colour, about 15-20 minutes.
- Add the diced onion, bell pepper, and celery to the pot, and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1-2 minutes.
- Add the chicken pieces and andouille sausage to the pot, and cook until the chicken is browned on all sides.
- Pour in the chicken broth and diced tomatoes, and bring the mixture to a boil.
- Reduce the heat to low, and add the sliced okra, bay leaves, thyme, oregano, paprika, cayenne pepper, salt, and pepper. Simmer the gumbo, uncovered, for about 45 minutes, stirring occasionally.
- Taste and adjust the seasoning if needed.
- Serve the chicken gumbo over cooked white rice, garnished with chopped green onions.
