Ingredients:
- 1 pound dried butter beans
- 6 cups water or vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter or olive oil
- Optional: chopped fresh herbs (such as parsley or thyme) for garnish
Instructions:
- Rinse the butter beans and pick out any debris. Place them in the Instant Pot.
- Add the water or vegetable broth, diced onion, minced garlic, bay leaves, salt, and black pepper to the Instant Pot.
- Close the Instant Pot lid and set the vent to the sealing position.
- Cook on high pressure for 25-30 minutes, depending on your desired bean tenderness. Allow for a natural pressure release for 10 minutes before manually releasing any remaining pressure.
- Carefully open the lid and stir in the butter or olive oil.
- Taste and adjust the seasoning if needed.
