Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups brown sugar
  • 1 tablespoon apple pie spice (or a combination of cinnamon, nutmeg, and ginger)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 egg
  • 1/4 cup apple cider
  • 1 medium apple, peeled and chopped
  • 1 cup almonds, chopped

Instructions:

  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  • In a large bowl, whisk together flour, brown sugar, spices, baking soda, and salt.
  • In a separate bowl, cream together butter and egg until light and fluffy. Beat in apple cider.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Stir in chopped apple and almonds.
  • Drop by rounded tablespoons onto prepared baking sheets.
  • Bake for 12-15 minutes, or until golden brown around the edges.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
